Background
One of South Africa’s largest hotel groups has used Bokashi Bran across multiple properties since 2022.
By FY2026, the programme covered 20 properties across five hotel brands. The group needed a consistent, reportable system capable of handling very different kitchen volumes, layouts and staffing structures.
Implementation
Each property was onboarded individually using the six-role SCHWAS accountability framework and on-site training.
Drums are weighed and recorded on the Bokashi Bran app. Each property receives monthly reports, while head office receives consolidated group reporting and an annual certificate.
The Cost Case
At one benchmark property, the previous single-contractor waste cost was approximately R18,059 per month.
After food waste separation, the blended monthly cost reduced to R16,516 while adding full food waste compliance, managed collections and certified reporting.
